More Greek goodness

Since the first Greek Goodness went over so well, here's another luscious family recipe.


TIROPITES
FROM Yiayia Diamando Pechulis
to: Mama Anna Tatamanis
to: Mama Artemis
to: Daughters: Connie, Diane, Michele
Kristin, and Grandaughter Tiffany

In small pot:
1 cup milk
1/2 stick butter
Cook and stir slowly together until it slightly boils, medium heat.
then add 1/3 scant cup farina. (this is like Cream of Wheat - you can find it in the same isle in the grocery store)
Stir until smooth and thick
Remove from stove and add :
1 8oz cream cheese cut up
2 eggs
1 cup grated Romano cheese (or parmesan, but romano is stronger)
salt and pepper
Stir until smooth consistency.
small pieces of Feta (to be placed in each triangle before you wrap it up.

Cut sheet of phyllo in thirds at the width. Take one of the cut sheets, Melt a stick of butter and brush phyllo with butter, place 1 tsp of batter on end, add one small square of Feta on top, --bring up sides of phillo over the batter, then fold as the flag or you can roll. Brush melted butter on top
Bake 375 20 minutes.
Can be baked ahead and served cold. Do not warm in microwave (the filo with wither.) Do not cover the tiropites (Phillo will wrinkle up ) If you want to warm them , put in warm oven for about 10 minutes.

P.S. you can make large ones with more batter and only 1/2 sheet of Phyllo for a luncheon or side dish. xx

This is a family favorite - BUT, the best is yet to come...... spanakopita! :-)
